Apple Cinnamon Crunch Overnight Oats

This overnight oats recipe is like fall in a cup — all your favorite autumnal flavors like apple, cinnamon, pecans, and vanilla.

Ingredients

FOR OVERNIGHT OATS:

  • ⅓ cup / 80 ml unsweetened almond milk

  • 1 scoop Vanilla Shakeology

  • ¼ cup / 20 g dry rolled oats

  • ½ small apple, chopped, divided use

  • 1 tsp. chia seeds

  • ½ tsp. pure vanilla extract


FOR CRUMBLE:

  • 3 unsalted pecan halves, finely chopped

  • 2 tsp. dry rolled oats

  • 1½ tsp. almond flour

  • ½ tsp. coconut sugar

  • ½ tsp. extra-virgin coconut oil

  • ¼ tsp. ground cinnamon


Instructions

  1. To make overnight oats, add almond milk, Shakeology, oats, ½ of apple, chia seeds, and extract to a 16-oz. (450-ml) jar; mix well. Seal jar; refrigerate for 4 hours or overnight.

  2. To make crumble, add pecans, oats, almond flour, sugar, oil, and cinnamon to a small bowl; mix well.

  3. Just before serving, top oatmeal with crumble and remaining ½ of apple. Store refrigerated in an airtight container for up to 24 hours.
