Ingredients
FOR OVERNIGHT OATS:
⅓ cup / 80 ml unsweetened almond milk
1 scoop Vanilla Shakeology
¼ cup / 20 g dry rolled oats
½ small apple, chopped, divided use
1 tsp. chia seeds
½ tsp. pure vanilla extract
FOR CRUMBLE:
3 unsalted pecan halves, finely chopped
2 tsp. dry rolled oats
1½ tsp. almond flour
½ tsp. coconut sugar
½ tsp. extra-virgin coconut oil
¼ tsp. ground cinnamon
Instructions
To make overnight oats, add almond milk, Shakeology, oats, ½ of apple, chia seeds, and extract to a 16-oz. (450-ml) jar; mix well. Seal jar; refrigerate for 4 hours or overnight.
To make crumble, add pecans, oats, almond flour, sugar, oil, and cinnamon to a small bowl; mix well.
Just before serving, top oatmeal with crumble and remaining ½ of apple. Store refrigerated in an airtight container for up to 24 hours.
